“Powders are serious power players. Because they’re so easy to incorporate, they’ve found their way into lattés, smoothies, nutrition bars, soups and baked goods… Even protein powders have evolved beyond bodybuilders to pack in new nutrients like skin- and hair-enhancing collagen.”
When Whole Foods Market revealed its Top 10 trends for 2018, its No. 2 trend was Super Powders. They wrote:
“… Scoop by healthy scoop, collagen has gained mainstream interest over the past year as everyone adds it to their smoothies, matchas and lattes in the quest for glowing skin, healthy joints and gut healing. In 2019, as more collagen and bone broth products enter the market, so will convenient opportunities for consumers to take collagen on a daily basis. Supplement companies will continue to offer an array of collagen products, including collagen powders, gummies and drinks; marine collagen powders; and even vegan-friendly collagen precursors.”

“…This comes as part of a bigger move by food and beverage manufacturers to develop products promoting skin health and appearance. Collagen is being infused into beverages, snack bars, and even wraps to help replace diminishing levels as consumers age.”
The Specialty Food Association’s (SFA) Trendspotter Panel identified eight key trends for 2019, including one it calls “Edible Beauty.” Their experts noted:
“Collagen, a protein with many benefits, is most commonly promoted for its ability to produce glowing skin and healthy joints. Widely known as a cosmetic supplement in the beauty industry, collagen use is now trending as a consumable supplement.”
In 2017, Jamba, Inc. added two on-trend watermelon smoothies at its popular Jamba Juice outlets. One was Poolside Fit, pre-boosted with collagen. Said the company:
“The phrase ‘you are what you eat’ has never been more front and center—especially if you are looking to feel young and beautiful. Ingredients like collagen, sea weed/algae, vitamin C and hyaluronic acid purport to not only keep skin, nails, and hair supple but to keep your gut lining fortified for that inner to outer glow. This past year, 2018, saw more than 3,000 new food products featuring collagen, according to Datassential.”
In its look at 2019 trends, Sterling-Rice Group identified one as “About Face.” The authors note:
“Functional foods are the ‘it’ health trend today . . . Expect to see more innovative uses of ingredients such as collagen for beauty, cannabis for relaxation and karkade for stress relief, and operators calling out these specific benefits directly.”
Foodservice trend watcher Technomic released its “7 Key Trends for 2019” They noted:

It is not uncommon for people to have a diet that is significantly low in collagen protein.
In part, that's because health conscious consumers increasingly avoid meat, or look for the lean cuts of chicken and remove the skin of fish in an attempt to reduce fat intake.
In addition to its body benefit appeal, collagen easily serves as a versatile, value-added ingredient in countless food applications across multiple daily eating or drinking opportunities.
Collagen lends itself particularly well to yogurt and other dairy applications. In these fermented products (or even alcoholic beverages) collagens do not negatively affect the fermentation process. The combination of collagen peptides with ferments actually boosts sensory appeal and texture—all with the benefit of added protein.
DAIRY
Whether coffee, hot chocolate, sports drinks, near waters, dairy-based shakes or other beverage options, collagen peptides can be used in concentrations up to 25%. In liquid applications collagen peptides are clear soluble compared to other proteins. They can be used over a wide range of concentrations and pH without loss of quality and performance. At low protein concentrations, all

collagen peptides show almost the same low viscosity, independent from average molecular weight (or degree of hydrolysis). With increasing concentrations, the viscosity increases, from watery to syrup like liquids. With collagen peptides it is possible to adapt individual mouthfeel and texture.

DAIRY
Soups are an excellent carrier for collagen fortification because collagen peptides are highly soluble and heat stable. As an additional benefit, collagen peptides offer flavor-enhacing properties—meaning that concentrations of salt, spices and other additives often found in soup or soup mixes can be substantially reduced without compromising expected flavor profile.
SIDE DISHES
Condiments also can be an area to incorporate collagen. In Dijon mustard, for example, collagen acts as an emulsifier while it improves mouthfeel and texture and helps reduce fat content. Collagen also can benefit sauces, dressings and spreads and is known for its excellent emulsification properties that support reduced-fat formulations.
SAUCES, DRESSINGS & SPREADS
In addition to increasing the protein and collagen values in bars, collagen peptides offer adhesive properties that enable effective binding of dry ingredients, allowing for the reduction of sugars that are typically used as binders in bars. Fortified confections are also trending and collagen makes the perfect addition to beloved gelatine-based candies, such as gummies.

Be advised...
...Not all collagen peptides are CREATED EQUAL!
Like no other protein, collagen is particularly rich in amino acids that, although not considered "essential," act as important signaling molecules for optimal cell stimulation.
However, a peptide effect can be larger than that of free amino acids alone, and this new concept is changing in the way scientists view protein nutrition.
Collagen peptides are active ingredients obtained from native collagen protein. The first step of production is the extraction of the large collagen fibers from collagenous material, followed by cutting the big molecules into small, specific, and highly bioavailable collagen peptides.
Not all collagen peptides are created equally; nor do they share the same scientific substantiation or credibility. There can be significant variance between different collagen peptides. The amino acid arrangement of the specific collagen peptide bond is important.
After collagen peptides are rapidly digested and absorbed, they must be able to maintain their active properties. This all related to the way collagen is cut, and into which pre-defined smaller pieces.
