In 1900, the esteemed Michelin Guide was born in a small village in central France – but it had nothing at all to do with dining. Originally published by brothers and tire company owners Andre and Edouard Michelin to promote road travel, it has since grown into the most revered culinary rating system in the world. The secret to chef Edip Sigl’s success at es:senz lies in simplicity: although the dishes are beautifully plated, they each feature only three or four carefully chosen ingredients, allowing contrasting flavors to shine.
