Carrots are really sweet.
A nice, just-mature carrot is not too large; carrots that are smaller in size offer a sweeter bite and a more intense flavour.
Size matters.
We’re so used to seeing carrots for sale all year round, but they are in their prime – sweet, crunchy and delicious – from now right up until Christmas.
They’re at their best now.
Farm manager Neil has worked for Lidl's root veg supplier in Norfolk for 25 years
Carrots are versatile, inexpensive and long lasting, but that doesn’t mean they’re not special. You can enjoy them raw or cooked, in sweet or savoury dishes – and even juiced. And Neil knows just how to bring out their best. ‘Farmers are caring, patient people – it’s the way they have to be – and that’s rewarded with better crops’. And as carrots grow all year round, that means working no matter the weather – packing them as quickly as possible so they reach the shelves at their best. So what are three things he wants us to know about these kitchen heroes?
Cut the prosciutto slices lengthways into chunky strips and wrap a strip of prosciutto around each carrot. Place in a roasting tin and drizzle over the oil and maple syrup for , along with plenty of seasoning. Toss to make sure the carrots are completely coated in the oil and syrup and then roast for 25-30 minutes, until the carrots are soft and the prosciutto
Preheat the oven to 200°C, fan 180°C, gas 6. Cut the carrots into chunky wedges, either halving smaller carrots, or quartering larger ones. Bring a pan of cold water to the boil and add the carrots. Parboil for 5 minutes, then drain and set aside until cool enough to handle.

Our Verona-based panettone supplier explains some of the magic that goes into producing this very Italian treat
Authenticity is important to Lidl, which is why, for the past 20 years, we’ve sourced our traditional panettone straight from Italy. Our supplier can trace its history to a family bakery that opened in Verona in the early 1900s.‘That’s where we learned the techniques and secrets of traditional Italian baking,’ says Cosma, the bakery’s Group Industrial Director. The secret to a perfect panettone? Patience, timing and dedication. Its recipeis created with the finest Italian ingredients, with candied orange peel and sweet raisins mixed in. ‘We have a team of people taking care of the dough 24/7,’ Cosma
‘Eating panettone for us marks the start of the festive season. It’s tied to so many memories about growing up and spending time together.’
‘Traditionally, we eat panettone on Christmas Eve, but the fact is we start eating it at the start of December – and then don’t stop til February!’
