Top-notch products at a fair price are important to us, which is why we source our Fairtrade chocolate Easter eggs from a family-run, Devon-based business whose commitment to quality and ethical sourcing is at the heart of everything it does. Add to this a determination to keep people at the forefront of its operations, and you have all the ingredients for deliciously creative, award-winning Easter eggs. ‘We’re not an automated factory – we’re much more handcrafted,’ explains owner, Chris. ‘We’re more about adding value than just pressing go on a machine and churning out loads of eggs to foil wrap and put into boxes. We’re a people-based operation and we train our chocolatiers in developing new techniques and finishes to apply to the eggs.’ Chris has been supplying Easter eggs to Lidl for five years now, and only uses Fairtrade chocolate to ensure that commitment to quality runs right through the supply chain. ‘We want to be sure that we're doing business well and doing business right. Fairtrade has been around for a long time and people recognise the value it offers and know what it is they’re buying.’ So, what’s the secret to Easter eggs that win over both the critics and the customers? Quality ingredients, quality craftsmanship and going about business the right way, says Chris. ‘The end result is always better.’ And it helps, of course, that Chris loves the work he does. ‘You’d think after all the eggs we make, we wouldn’t still get excited about them, but we do. You never lose that passion, it’s a wonderful world to be involved in.’ So, which is Chris’s favourite Easter egg? ‘The Deluxe Triple Chocolate Marbled Egg,’ he says, without skipping a beat. Here’s why:

Slice the corn kernels from the cobs and roughly chop the asparagus and spring onions into large bite-sized pieces, then scatter them over the salad to add colour, and crumble on the feta for tang .

Slice the steaks and arrange on top of the salad, drizzling any resting juices over to add smoky flavour.

Lift the steaks from their marinade and barbecue for about 3 minutes each side or until done to your liking. Remove to a plate, cover loosely with foil and leave to rest for 5 minutes.

When the barbecue is hot (and the flames have died down if cooking over charcoal), grill the corn on the cob, the asparagus and the spring onions until slightly charred all over for smokiness, turning as needed. The corn will take about 10 minutes, the asparagus 4-5 minutes and the spring onions about 2 minutes, depending on the heat level of the barbecue, so remove as they are ready.

Whisk together 2 tablespoons of olive oil, seasoning and the lime juice for zing , to make a dressing. Roughly chop the Sweet Gem lettuces for crunch and the coriander and toss through the dressing, then arrange on a sharing platter or individual plates.

Trim the ends off the spring onions and the asparagus and place in a dish or bowl, adding the corn cobs. Drizzle over 1 tablespoon of olive oil and some seasoning and toss to lightly coat.

For the marinated steak, whisk together the olive oil, lime juice, garlic granules, spices and herbs with some seasoning in a shallow dish. Add the steaks and turn to coat, then marinate for about 30 minutes at room temperature (or longer in the fridge). Preheat the barbecue.

From the forerib, this cut is marbled with a central piece of fat and, as a result, is very tasty.
From inside the sirloin, this is the most tender, buttery cut with the least amount of fat. A good one to serve with a sauce.
From the backside and well hung, this is a leaner, flavoursome steak. It’s not an easy one to eat rare, though, so give it a bit longer on the grill.
Taken from the middle back, this is a good-size steak that’s well marbled, tender and juicy but not necessarily deep with beefy flavour.

A fruit salad in summer is always a good idea, but why not try one of these fun ideas instead?
It’s the finishing touches that can really set your barbecue game apart, and smoky desserts are a cracking example. Make the most of those dying embers with this barbecue pudding idea.
Barbecued tropical fruit with brioche and coconut cream
Whip the cream, icing sugar and coconut liqueur (if using) together until it has soft peaks. Toast the brioche buns on the barbecue.

Tear off 2 large sheets each of foil and non-stick baking paper, and lay the paper on top of the foil to create 2 parcels.
Cut the peel away from the pineapple with a serrated knife then slice it into wedges and cut away the core. Peel the mangoes with a vegetable peeler then slice the flesh from the stones in chunky slices.
Remove the zest of the lime with a zesting tool or grater, and reserve to garnish.

Pop a punnet of grapes in the freezer – they take on a sort of half sorbet, half granita texture.
Frozen grapes
Bananas become ice-cream-like when frozen. Peel and halve, then insert a skewer into the flat end. Wrap individually and freeze, then dip into melted chocolate and roll in chopped nuts, coconut or sprinkles.

Toss pitted cherries with brown sugar and vanilla extract, then pile onto a double-layer square of foil, seal and place the parcel on the barbecue. Cook for about 20 minutes, then carefully open and tip into a bowl. Blitz to a purée and serve over ice cream.
Smoky cherry sauce
2 tbsp Coconut Cove liqueur (optional)
Divide the pineapple wedges between the 2 parcels and scatter with the brown sugar. Add the mango then halve the lime and squeeze the juice over the tropical fruit. If adding passion fruit, cut them in half and scoop out the seeds and pulp with a teaspoon, adding them to each parcel for extra fruitiness.
Fold the baking paper around the fruit, crimping the paper to seal, then fold the foil around it, making sure the fruit is completely sealed in.
Cook on a still hot barbecue for 10-15 minutes, flipping the parcels halfway through.
Carefully open the parcels and spoon the hot fruit and juices over the toasted brioche. Top with the whipped cream for richness and lime zest for zing .

Times have changed since Thomas and his family started growing soft fruit in the late 1970s. ‘The industry has grown and we’ve grown with it,’ he says. Instead of uncovered crops, berries are now digitally monitored and ripened in protective polytunnels. And while the growing process uses high-tech equipment, picking the berries relies on something else altogether. ‘It comes down to human instinct,’ says Thomas. ‘We work with experienced pickers who are absolute naturals and who know by sight which berries are ready to pick.’

Brush the tortillas with the remaining oil and then return to the barbecue or grill pan for 2-3 minutes, turning once, until the wraps are toasted and the cheese has melted. Set aside for a minute, until to cool enough to handle, then enjoy straight away.
Divide the fish among the tortillas, placing the strips on one half of each wrap. Scatter over the tomatoes, peppers, coriander and jalapeños for kick . Scatter over the cheese and dollop with the creamy sour cream. Soften the edge of the tortilla with a little water on your finger, then fold over the uncovered half to encase the filing, pressing the edges together firmly to seal.
Mix 1 tablespoon of the olive oil with the lime zest and juice for zing , and cumin and cayenne for punch, then pour this over the basa fillets. Set aside for 30 minutes to marinade. Pat the fish dry with a paper towel and brush with another 1 tablespoon of oil. Grill on a hot barbecue for 4-5 minutes, turning once, or alternatively cook on a griddle pan. Remove to a plate and cut into chunky strips.

Remove the lamb from the oven. Mix the marmalade and the Worcestershire sauce together to add tang and blitz in the microwave for 30-45 seconds, until bubbling. Baste the lamb with half of the glaze. Return to the oven for 15 minutes, then baste again with the remaining glaze. Return to the oven for a final 15 minutes. Remove and leave the lamb to rest for 15-20 minutes.
Separate the garlic cloves and peel. Make small incisions in the lamb and poke a garlic clove in each one for kick , along with a small sprig of rosemary. Sit any remaining rosemary in the middle of the roasting tray on top of the vegetables and place the lamb on top. Season well all over, then pour over the chicken stock. Roast for 3½ hours.
Preheat the oven to 160°C, fan 140°C, gas 3. Peel and slice the potatoes and carrots very thinly. Peel and slice the onion. Put all the vegetables in a bowl with the ground coriander for punch and season. Mix well and then layer up the vegetables in the base of a large roasting tray. Dot over the butter for richness .

Add two-thirds of the pecorino to the pasta for creaminess and the pepper for kick, stirring continuously until it melts to a silky sauce, adding more pasta water if necessary. Serve, scattered with the remaining pecorino.

Add the seafood for paella mix for juiciness and continue to cook for another couple of minutes, until the fish is hot and the liquid is nice and saucy. Stir through the parsley and season well with black pepper. Serve immediately.

Sure, you can toss a handful of our cheap and cheerful frozen berries into smoothies, stir them into porridge and fold them into a cake mixture, but why not try something new, like this easy jam recipe?
Ice in a cocktail or mocktail is great, until it melts and dilutes your drink. Use chunks of frozen fruit or berries instead – you’ll get all the chill factor and none of the dilution.
Use to chill your drinks
Blitz chunks of frozen mango with coconut cream and a little lime juice and zest until smooth. Serve immediately.

Thread slightly thawed frozen berries (or chunks of frozen pineapple, mango and banana) onto skewers and serve.
Make frozen fruit sticks
Ladle the quick jam into clean jars, cover, cool and then chill until set. The jam will keep for up to 2 weeks in the fridge.
Bring to the boil and bubble briskly for 8 minutes, taking care that it doesn’t boil over. Remove from the heat, sprinkle in the jelly crystals and stir to dissolve and mix through evenly. Leave to settle for 5-10 minutes, then skim off any froth with a spoon.

Place the frozen berries in a wide pan with the sugar and lemon juice for fruitiness , sweetness and tang , and heat gently, stirring occasionally, until the berries have defrosted and the sugar has completely dissolved (check that the mixture doesn’t feel grainy). Mash the berries to break them up.
