What gives beets their striking color? Antioxidant and anti-inflammatory pigments called betalains. Two types color your beets:

beets
get their rich hue from betacyanins (rarer cousins of anthocyanins, which turn most produce red).
Purple
beets
are also colored by betacyanins. If beets turn your urine pink or red (beeturia), blame betacyanins!
Golden
beets
