Carrots come in rainbow bunches. Each color reflects different nutrients. Is one hue better than another?

Orange
carrots
are higher in beta carotene, an antioxidant pigment (carotenoid). Eating too many can briefly turn your skin orange.
Yellow
carrots
contain beta carotene & lutein,
a carotenoid researchers think may protect the eyes. (Antioxidants shield cells from damage.)
Red
carrots
and all other colors provide biotin, fiber, potassium, vitamins K, B6 & C, and the trace element molybdenum.
Purple
carrots
have more of the carotenoid anthocyanin. Researchers are studying its ability to treat inflammation
and obesity.
White
carrots
may be devoid of color. But they’re not devoid of nutrition! Their fiber will ease
your digestion.
