Is the tomato a fruit or a vegetable? Though technically a fruit, its nutrient profile is more like a vegetable’s.

Red
tomatoes
are excellent sources of antioxidants, including carotenoids (lycopene &
beta-carotene)
and vitamin C.
Pink
tomatoes
and orange varieties provide lycopene, which may be most easily absorbed from these colors.
Purple
tomatoes
and the brown & black varieties contain the
most lycopene, beta-carotene, vitamin C and potassium!
Green
tomatoes
are much lower in carotenoids. And while they’ve got a place in a healthy plant-based diet, frying (sadly) robs them of nutrients.
