Redefining perceptions of Prosecco
After a decade of research endeavouring to redefine the perception of Prosecco, Bottega has unveiled its Prosecco Premium Vintage Collection: four extra brut, vintage-dated sparkling wines – Gold Cru, Gold Diamond, and the flagship Stardust Black and Stardust Gold – sourced from top vineyards.
Although Prosecco is typically valued for its youthful freshness, the Premium Vintage Collection is matured for longer in newly-developed horizontal autoclaves. This longer contact with the yeast encourages autolysis – the release of compounds that add body, structure, and savoury complexity. This uncommon approach for Prosecco mirrors practices used in other sparkling wine regions.
Ageing varies by cuvée, the longest being the Stardust Gold, which spends 12 months on its lees, followed by Stardust Black, aged for nine months. The aim behind this approach to maturation is to give the wines greater substance and depth of character – while still reflecting the aromatic nature of the Glera grapes from the Treviso hills.
For the winery’s CEO, Sandro Bottega, gastronomy and longevity is the vision for these wines, ‘I was confident that Prosecco could have gastronomic versatility and ageing potential, suitable for fine dining and discerning wine collectors’.
Made in the traditional style with a touch of residual sugar, this Cartizze is fragrant with apple blossom, lemon peel and bergamot. A lean, tight palate, with fresh acidity and intense flavour concentration. The sugar is beautifully integrated, barely discernible. Long persistent finish. Elegant example.

This new Premium Vintage Collection underscores Bottega’s ambition to define top quality expressions of Prosecco, sitting seamlessly alongside the Valdobbiadene Prosecco Superiore DOCG Cartizze Dry – the ultimate expression of the region’s terroir. Produced from grapes grown in the exclusive 108ha hilly Cartizze area, this single-vineyard wine is another benchmark for high quality, ageworthy Prosecco.
Together, these flagship wines affirm Bottega’s conviction that Prosecco can be long-lived, collectible, and worthy of the fine wine table.
Aged on its lees for nine months, this is perfumed on the nose with dried flowers and candied lemon peel. Very dry and austere but balanced by the volume of flavour on the palate. Fine bubbles, mouthfilling with green apples, grapefruit and a hint of crushed almonds. Persistent.

Stardust Black Vintage 2021 Prosecco DOC
With the longest lees ageing of the range, 12 months, this Prosecco is aromatic with notes of brioche mingled with dried apples and grapefruit. Dry, tight and lean texture with density. Lime leaf, lemon pith and a hint of honey, wrapped in creamy mousse. Lingering chalky texture on the finish.
