When you’ve got a few friends or family members popping over, it’s usually a good idea to have nibbles at the ready for people to graze on, says Jean-Christophe. This Spanish-style sharing platter is the perfect way to elevate your go-to ‘picky bits’, bringing together an easy homemade dish with ready-to-serve Tesco Finest charcuterie elements. These moreish flavours go perfectly with the Tesco Finest Rioja Reserva, with its wonderfully intense flavour of raspberry, with layers of oak and spice. Conveniently, this vibrant sharing board only takes 5 minutes to prepare – you can even arrange the cold elements beforehand and get the sourdough in the oven just before your guests arrive. Then, all you need to do is open your bottle of wine and you’re ready to host. Easy!

While the full English breakfast will always have a place in our hearts, many of us like to mix things up when it comes to weekend eating. Shakshuka has become a firm favourite, and this One-pan brunch eggs recipe is a take on the Middle Eastern classic – made even more delicious with Tesco Finest ingredients. Using the Tesco Finest Mixed Baby Sweet Tomatoes for the sauce creates a mouth-watering taste explosion – slathered over slices of soft Finest White Sourdough Loaf, it will brighten up any weekend. Once you’ve tasted this one-pan delight, you’ll be counting down the days until it’s weekend brunch time again.
Laid-back weekends
Entertaining made extra easy with a few handy ingredients. Arrange on a platter,
adding other bits you fancy – melon and rocket are great options.
1 Tesco Finest White Sourdough Loaf, sliced into 16 pieces
Olive oil, for drizzling
2 garlic cloves
2 Tesco Finest Tomatoes On The Vine
Few sprigs thyme, leaves picked
200g Tesco Finest Spanish Meat & Cheese Selection
100g pack Tesco Roasted & Salted Almonds
Spanish olives, to serve
Handful rocket leaves
Tesco Finest Rioja Reserva, to serve
Heat the oven to 200C Fan/Gas 7. Lay the bread on a baking tray and drizzle with olive oil. Bake for 4-5 mins until golden and crisp. Rub each slice with one of the garlic cloves.
Meanwhile, whizz or grate the tomatoes into a bowl and add the chopped garlic and season with salt and pepper. Spoon on the bread, then drizzle with more olive oil.
Arrange on a platter with the meat, cheese, almonds, olives and garnish.

6tbsp olive oil
1 red onion, finely sliced
2 red peppers, sliced
4 fat garlic cloves, chopped
2 tsp cumin seeds
½tbsp smoked paprika
400g tin tomatoes
220g pack Tesco Finest Mixed Baby Sweet Tomatoes
4 Tesco Finest Free Range Bluebell Araucana Eggs
1 small ripe avocado, sliced
50g Tesco Finest Barrel Aged Feta, crumbled
Handful flat leaf parsley, roughly chopped
Tesco Ingredients dukkah or chilli flakes to sprinkle (optional)

Heat the oil in a large frying pan over a medium heat. Add the onions, peppers, garlic and spices. Fry gently for 8-10 mins until softening.
Stir in the tomatoes and ½ can of water, season with salt and pepper, then simmer for 20 mins until thickened and saucy.
Make four indentations in the sauce and crack an egg into each one. Cover the pan with a lid (or piece of foil) then cook for 4-5 mins until the whites are set but the yolks are still runny.
Serve the eggs at the table, topped with the avocado, feta, parsley, sprinkle of dukkah or chilli flakes (if using) and the parsley with a good grind of black pepper.
Serve with toasted sourdough on the side for mopping up the juices.

Method
In a small bowl, whisk the eggs with plenty of salt and pepper, adding some of the chives.
Melt half the butter and a splash of oil in a 20cm non-stick frying pan and fry the mushrooms and garlic with salt and pepper for 4-5 mins. Transfer to a plate, wipe out the pan with kitchen paper, then heat the remaining butter in a large non-stick pan over a medium heat, tilting the pan to
cover the base.
Once foaming, pour in the eggs, swirling
the pan to cover the base.
Using a spatula, gently draw the eggs in from the sides. Swirl the pan again so the uncooked egg fills any gaps.
When the egg is almost cooked and the base is golden brown, top with the garlicky mushrooms and cheese. Using the spatula, fold the omelette in half and let the
cheese melt.
Slide onto a plate and serve with dressed salad leaves, scattered with more chives.

A little can go a long way when you have beautiful ingredients. You don’t need to bend over backwards
to make yourself something delicious, or put a smile on other people’s faces.

Heat the oil in a large frying pan over a medium heat. Add the onions, peppers, garlic and spices. Fry gently for 8-10 mins until softening.
