Recipe number one is a version of classic carbonara, made with Tesco Finest Gigli Pasta. Only the finest expert pasta makers with over 100 years' experience create Tesco Finest pasta. Because this dish only takes 10 minutes to prepare, it’s a great choice for a weeknight supper. Ingredients
Cook the pasta in a large pan of boiling, salted water, according to pack instructions. Then drain lightly, reserving a cup of the cooking water.
Fry the pancetta in a splash of olive oil in a non-stick frying pan until crispy and golden brown, turning to make sure it’s evenly cooked,
then set aside on a piece of kitchen paper to drain.
Beat the eggs in a medium bowl with the Parmesan and plenty
of black pepper.
Remove excess oil from the pan, then add the drained pasta.
And crumble in the crispy pancetta, tossing to combine. Add the egg/Parmesan mixture, stirring and working quickly to avoid the egg setting. Add a splash of the pasta cooking water to loosen the sauce,
it should look smooth and silky.
Serve in bowls, with extra black pepper, grated Parmesan and
a few thyme leaves, if you like.

Once you’ve assembled this cheesy cottage pie, you can pop it in the fridge, ready for its final baking in the oven. Its mouth-watering base is made using Tesco Finest 5% Fat Aberdeen Angus Steak Mince – from specially selected cuts that add a rich, full flavour – simmered slowly with herbs, garlic and red wine. Then it’s topped with a mash that has a cheesy kick that takes the whole dish to another level, thanks to the addition of Tesco Finest Gruyère. It will emerge crisp and bronzed from the oven – making it a dazzling centrepiece for a weekend meal.

Heat the grill to high. Cut the bread into 4-5 pieces and arrange on a baking tray. Lightly toast under the grill.
Flip over the toast and top each with ½ tbsp cheese sauce and 1tsp chutney. Scatter over the cheese then grill for 3-4 mins.
Scatter with the spring onions and a grind of pepper to serve, with any remaining chutney on the side.

Using wine in this tasty sauce means you can serve the remainder with the dish - a great one to have ready to put in the oven after a leisurely weekend walk.
500g pack Tesco Finest 5% Fat Aberdeen Angus Steak Mince
2tbsp Tesco Finest Sicilian Extra Virgin Olive Oil, plus a splash for frying
1 large onion, chopped
2 large carrots, chopped
2 stick celery
2 fat garlic cloves, sliced
2 bay leaves
2tsp dried oregano
2tbsp tomato purée
250ML Tesco Finest Rioja Reserva
3 tbsp Worcestershire sauce or mushroom ketchup
400g tin chopped tomatoes (plus ½ can of water)
For the topping:
500g Tesco Finest All Rounder Potatoes, chopped into chunks
200g carrots, chopped
200g celeriac, peeled and chopped
2tbsp milk
50g butter
100g Tesco Finest Gruyère, grated

Dry fry the beef in a non-stick pan with a splash of oil, breaking up the mince with a wooden spoon as it cooks.. Once browned, use a slotted spoon to transfer to a plate and discard the fat in the pan.
Add 2tbsp olive oil and fry the onion, carrots, celery and garlic with a pinch of salt and the bay leaves and oregano for 8-10 mins until softening.
Stir in the tomato puree, then add back the browned beef with the red wine, bring up to a fast simmer, then add the Worcestershire sauce, chopped tomatoes. Simmer for 30 minutes.
Heat the oven to 200C/gas 6. Meanwhile, for the topping, bring a large pan of salted water to the boil. Add the veg and boil for 15-20 mins until softened. Drain and steam dry in the pan, then roughly mash with the milk, butter and seasoning. Add most of the cheese.
Spoon the mince into an ovenproof dish. Swirl the mash on top, then sprinkle over the remaining cheese. Bake for 25-30 mins until golden and bubbling.
Serve the Tesco Finest Rioja Reserva alongside, if you wish.
