This Tomato and Gruyère tart makes a dazzling addition to any al fresco spread. And it couldn’t be easier to whip up. Cheese and tomato is a classic combo, but the pairing of flavourful Tesco Finest Mixed Baby Tomatoes with nutty Tesco Finest Reserve Swiss Gruyère Cheese takes it to a whole new level. Only the finest Swiss cow’s milk from mountain dairies goes into making Tesco Finest Gruyère, which is then expertly matured for a full-bodied and fruity flavour.
The indulgent filling is enriched not only with cream cheese, but with Tesco Finest Free Range Bluebell Araucana Eggs which have golden yolks that are simply delicious. And the tart is a feast for the eyes as well, with its bronzed edges and vibrant colours.

Gruyère cheese and sweet baby tomatoes
475g Tesco Ready Rolled Puff Pastry
1-2 tbsp whole milk, for brushing
200g pack Tesco Full Fat Soft Cheese
2 Tesco Finest Free Range Bluebell Araucana Eggs
125g Tesco Finest Reserve Swiss Gruyère Cheese, grated
1⁄2 x 20g pack tarragon, plus a few leaves reserved to garnish
1⁄2 x 20g pack chives, chopped
1 garlic clove, grated
1⁄2 small red onion, finely sliced
250g Tesco Finest Sweet Mixed Baby Tomatoes, halved
Tesco Finest Marlborough Pinot Noir, to serve

Heat the oven to 200C Fan/Gas 7. Take the pastry out of the fridge 15 mins ahead. Unroll the pastry still on its paper on a baking sheet. Trim away overhanging edges.
Score a border 2cm from the edge, brush with milk and score the centre section a few times with a sharp knife.
Bake for 12 mins, until risen and golden. Use the back of a spatula/fish slice to push the centre section of pastry down, leaving the border intact.
Turn the oven down to 170C/Gas 5.
Mix the soft cheese with the eggs, Gruyère, herbs and garlic, then season with plenty of black pepper and flaky sea salt.
Pour into the tart case, then scatter the onion on top, followed by the halved tomatoes. Put back in the oven and bake for 15 mins, or until the filling is set. Leave to rest for 5 mins before serving.

You’ve heard of a croque monsieur, but a croque madame? Well, it’s exactly the same classic béchamel-enrobed toastie, except with deliciously savoury ham and a fried egg on top. And our chefs dial up the luxury one notch further, by using slices of Tesco Finest French Brie With Truffle that’s been made with only the finest pasteurised cow's milk and a layer of luxurious white Italian truffle. This creamy, glorious cheese is layered with slices of Tesco Finest Finely Sliced Honey Roast Ham. Made using 100% British pork, the ham is steeped in an aged Wiltshire brine and hung on the bone to carefully mature, so all its flavour can develop. It's then marinated and roasted in honey to give it a caramelised finish whilst keeping all its tender texture. This delicious combination is then sandwiched between slices of Tesco Finest White Sourdough. Once

looks like wet sand, then cook for 3-4 mins. Whisk in the warm milk, slowly, to make a smooth sauce. Continue to cook, stirring, for 5-6 mins, until
you have a smooth, shiny thick sauce. Season with salt and pepper
and set aside.
Heat the grill to high. Heat a knob of butter and a glug of oil in a large frying pan. Fry the sourdough slices, two at a time, for 2-3 minutes on each side until golden.
Divide the sliced brie between 2 of the slices of toasted bread and add 3 slices of ham. Top with another slice of toast, then spread the béchamel sauce thickly on top of each sandwich and sprinkle over the grated cheese.
Put on a baking tray or grill pan and grill for 5 mins until melted and golden.
Meanwhile, heat a large splash of oil in the pan. Crack in 2 eggs and fry for 2-3 mins until the white is set and crisp at the edge and the yolk is to your liking. Serve the fried eggs on top or on the side of the sandwiches. Eat straight away.
