Method
Warm the oil in a heavy-based shallow casserole/high-sided frying pan with the chopped garlic, basil stems, lemon zest, chilli flakes and fennel seeds on a low-medium heat for 10 mins.
Once the garlic is golden, add the sausage meat. Turn up the heat and fry for 5-6 mins, breaking up with a wooden spoon, until starting to turn golden and crisp.
Stir in the tomato purée, chopped tomatoes, red wine vinegar and a
pinch of sugar and salt and pepper. Simmer for 15 mins.
Meanwhile, cook the pasta according to pack instructions. Drain,
reserving 100ml of the cooking water.
Gradually add the pasta cooking water to the sauce while it simmers
until you get a rich and glossy sauce.
Stir the pasta into the sauce, then simmer for another minute or so until the sauce is coating the pasta.
Serve from the pan with feta, reserved basil leaves and extra lemon zest, if you like.
