Torrijas were a favourite breakfast from my childhood, and the flavours in this delicious version transport me home
“
”
Torrijas are a Spanish version of French toast, with the added twist of infusing the milk with vibrant flavours. They’re simple to whip up but equally as showstopping for guests, thanks to the elevated flavour profile. Tesco Finest Sourdough Loaf, dreamily soft yet substantial, is soaked using Tesco Finest Free Range Bluebell Araucana Eggs. Simply glorious both inside and out, these eggs come from hens free to roam outdoors. With striking pastel-blue shells and rich, golden yolks, they are sourced only from trusted British farms, so you know they’re delicious.
The milk is elevated with cinnamon and fragrant Tesco Finest Emperor Orange zest. The Torrijas are then drizzled with glossy Tesco Finest Spanish Forest Honey for an extra dose of natural sweetness, and finished with the pièce de résistance: Tesco Finest Strawberries, Raspberries and Blueberries. These berries are expertly selected from only the finest varieties so they’re irresistibly sweet – the perfect topping for this treat.

Method
In a pan gently warm the milk with 1⁄2 tsp cinnamon and the orange zest, allowing to infuse for 5 mins.
In a shallow bowl, whisk the eggs and 50g granulated sugar. Strain over the infused milk and whisk to combine.
Put the bread on a lipped tray. Soak each piece of bread in the milk/egg mixture then put back on the tray. Pour over the remaining mixture and let it soak in – you may have some leftover mixture for an extra slice.
Put the remaining 2 tbsp sugar in a bowl and mix with the remaining 1 tbsp cinnamon.
Heat the oil and a knob of butter in a heavy-based frying pan. Fry the bread halves for 2-3 mins on each side or until golden. Repeat with more oil/bread.
Toss the berries with the orange segments. Serve in a bowl alongside the toast topped with cinnamon sugar, and a good drizzle of honey.

If you fancy a tipple to elevate your brunch, José and Ravinder whole-heartedly recommend a glass of Tesco Finest Provence Rosé to wash things down. A delicate and refreshing blush from the classic French region of Côtes de Provence, it’s the ideal fruity wine to compliment the sweetness of this dish. If you opt for a non-alcoholic drink, then a glass of freshly squeezed orange juice would be just the ticket.
