Say hello to Penelope Bourbon Bungalow, a mobile tasting room with all the breezy charm of a seaside escape and the coziness of a good pour. With its weathered shingle siding, cheerful teal shutters, and pitched roof, it looks like a classic coastal cottage, but it’s so much more.
“Without a formal HQ, we wanted to meet our loyal customers where they are,” says Mike Paladini, cofounder of Penelope. “The idea was to blend our breezy coastal aesthetic with that signature Southern warmth.”
A spirit of blending is baked into Penelope’s DNA. Founded by Paladini and his longtime friend Danny Polise in 2018, the label marries bourbon-country craftsmanship—Penelope sources its whiskey from Indiana and Kentucky—with a coastal sensibility befitting the founders’ New Jersey roots. Now, that unique formula is hitting the road.

A Bourbon Bungalow Dream
The bungalow is designed to be both whimsical and welcoming. Outside, a striped yellow-and-white awning, soft exterior lighting, and the scent of caramel and oak make the space feel like an instant retreat. Behind the bar, Penelope’s brand ambassadors—spirits educators with more than a few clever cocktail tricks up their sleeves—walk guests through tasting notes, share pairing suggestions, and tell the story behind the bottle.
The bungalow was a clear crowd favorite at G&G’s Maker Marché, a series of events in Louisville, Charleston, and New Orleans that celebrated craft, artisans, and the country’s booming bourbon culture. Guests gathered around the quaint mobile cottage to enjoy the tasting experience and an Instagrammable photo op.

“Events like Maker Marché are exactly why we built the bungalow,” Polise says. “We want to be part of the community, not just at distilleries or bars, but where our fans are already gathering.”
The bungalow is also part of an effort to bring Penelope’s world to life in an intimate and fun way.
While Penelope bourbon itself—especially the Four Grain and the Toasted Series—has quickly become a darling among whiskey enthusiasts, the brand’s expansion into experiences is a nod to its belief that bourbon should feel personal.
“We’re not just pouring whiskey,” Paladini says. “We’re creating a moment.”

2 oz. Penelope Architect
1/2 oz. Cynar
1/2 oz. Domaine de Canton
3 dashes Angostura Aromatic Bitters
1 orange twist
Rinse a chilled rocks glass with Fernet Branca. Discard excess. Add all remaining ingredients to a mixing glass with ice. Stir until well-chilled and properly diluted, 25–30 seconds. Strain into the prepared rocks glass over a large ice cube. Express an orange twist over the top and place as garnish.
