Each month, Green State will be highlighting the ways Michigan’s cannabis culture is unique. Because of an abundance of award-winning chefs and delicious cuisine, it’s only natural that Michigan is home to a thriving edible cannabis scene. These aren’t your stoner uncle’s brownies – the recipes we’ll be featuring each month represent new ways to combine locally-sourced, farm-to-table cuisine and local Michigan cannabis, with resulting dishes that will satisfy both your head and your appetite.

This recipe for cannabis chili is spicy enough to warm you up, hardy enough to assist in regulating appetite, and may support you in meeting your health goals.
•(5) jalapenos, seed or reduce amount for less heat
•(3) serrano peppers, seed or leave out for less heat
•(2) green bell peppers
•(1) red bell pepper
•(1) large yellow onion
•(2) cans diced tomatoes

How to make cannabis flour

In the ongoing effort to find ways to get cannabis into food, here’s an idea that makes a ton of sense — canna-flour.
Canna-flour is decarbed cannabis ground to a fine, powder-like consistency that can be easily added to any baking recipe. For best results, substitute no more than one-quarter of the flour in your recipe with cannabis flour so the mixture will retain its doughy texture. My favorite baking mix is 1/2 white flour, 1/4 whole wheat flour, and 1/4 cannabis flour.

Introducing cannabis tea: your new best friend.
Here’s some backstory: Cannabis tea (a term that encompasses any one of the various combinations of dry cannabis flower or cannabis tincture and, you guessed it, tea) has been around for a long, LONG time. We can’t know for sure when it made its first appearance, but legend has it that cannabis tea was first used around 1,000 B.C., when, in India, a mixture of milk, herbs, and ground cannabis flower was used to create a ceremonial tea called Bhang. Since then, it has been used in the country as a treat for guests, a religious offering, and, primarily, as a remedy for indigestion, sunstroke, and fever.

Whether you are 27 or 72, birthdays are special. At the kitchen of Laurie and Mary Jane we infused this triple-layer gateau with one of our favorites, the sweet, strawberry and diesel-smelling Bruce Banner strain.
This pistachio chocolate cake, uninfused, has been the Wolf family birthday dessert for years. The frosting, a pistachio buttercream, enrobes the dark, rich chocolate cake. Pistachio has no problem masking the taste of the canna-butter, and chocolate and cocoa do the same for the infused oil in the cake. If you didn’t know you would never know, but of course you will know because we don’t give cannabis to unsuspecting people — it’s not nice.
