She-Crab Soup
Serves 10
This rich seafood bisque is a beloved local favorite. Traditionally only made with female crabs (hence the name), this Lowcountry delicacy has delighted taste buds for generations.
Ingredients
Directions
2 large onions, diced
1 cup clarified butter
2 cups all-purpose flour
2 1/3 quarts half and half
1 quart heavy cream
1 1/2 teaspoons ground mace
1 cup good sherry
1 pound fresh white crab meat
Salt and pepper to taste
In a large stockpot, cook onions in butter until soft.
1.
Add flour, reduce heat to low, stirring constantly for 15 minutes.
2.
Add half and half and heavy cream, and continue stirring.
3.
Add remaining ingredients and simmer for 30 minutes, stirring frequently.
4.
Shrimp and Grits
Nothing says “Southern food” like this hearty dish that’s packed with flavor. One taste and you’ll see why it’s on nearly every menu in Myrtle Beach.
1 1/2 cups chicken broth
1 1/2 cups milk
3/4 cup stone ground grits
1/4 teaspoon salt (or more to taste)
1 cup cheddar cheese
1 cup diced bacon
1/2 cup thinly sliced onion
1 cup thinly sliced green bell pepper
1 pound medium peeled shrimp
2 teaspoons hot sauce
Salt and pepper, to taste
Sliced green onions for garnish
Grated cheese for garnish
Bring chicken broth and milk to a boil.

Stir in grits and salt, return to boil.
2.
Cover and reduce heat to low. Cook 20 to 25 minutes, stirring occasionally.
3.
Stir in cheese. Keep warm.

SHE-CRAB SOUP

Pimento Cheese
This zingy dip adds personality to any gathering. It’s also the perfect snack after golfing in the ''Golf Capital of the World.''
2 cups shredded monterey jack
4 cups shredded sharp cheddar
1 block softened cream cheese
1 cup mayonnaise
1/4 teaspoon white pepper
1/2 teaspoon garlic powder
1 teaspoon kosher salt
4 oz chopped pimento peppers
Combine softened cream cheese, mayonnaise, pimentos and shredded cheese in a large mixing bowl.

Top with garlic powder, pepper and salt.
2.
Mix evenly with a hand mixer or standing mixer.
3.
Chill in the refrigerator for 2 hours before serving for best results.

PIMENTO CHEESE
Cook bacon in a skillet until crisp.
5.
Remove bacon and all but 2 tablespoons of bacon fat.
6.
Add peppers and onions to the skillet and cook until tender.
7.
Add shrimp and cook until pink.
8.
Return the bacon to the skillet and add hot sauce.
9.
Add salt and black pepper to taste.
10.
Serve shrimp mixture over warm grits.
11.
Garnish with sliced green onions and grated cheddar cheese.

Peach Cobbler
This classic dessert makes excellent use of South Carolina’s glorious peach harvest.
4 cups fresh peaches or 4 cups frozen peaches, thawed, sliced & peeled
1 cup sugar, divided
1/2 teaspoon almond extract
1/2 teaspoon cinnamon
1/3 cup butter, melted
3/4 cup all-purpose flour
2 teaspoons baking powder
1 pinch salt
3/4 cup milk
Preheat oven to 350 degrees fahrenheit.
1.
In a bowl, gently toss peaches, 1/2 cup sugar, cinnamon and extract; set aside.
2.
Pour butter into a 2-qt. baking dish.
3.
In a bowl, combine the flour, baking powder, salt and remaining sugar; add milk and stir until smooth.
4.
Pour evenly over butter (do not stir).
5.
Top with peach mixture.
6.
Bake for 50-55 minutes or until golden brown.
7.
Serve with vanilla ice cream if desired.

PEACH COBBLER
Chicken Bog
This hearty, comforting dish is a cousin to jambalaya and a Lowcountry classic. The annual Loris Bog-Off Festival draws crowds from far and wide.
1 (4 to 5 lb) whole chicken
2 ribs celery
1 yellow onion
3 cloves garlic
1/4 cup unsalted butter
1 (14-ounce) package smoked sausage
4 cups long grain rice
Salt
Pepper
If included, remove and discard the chicken innards.
1.
Add the chicken and the neck (if included) to a large stock pot.
2.
Wash and coarsely chop the celery.
3.
Peel and quarter the onion.
4.
Peel and smash the garlic with the side of a knife.
5.
Add the celery, onion, and garlic to the pot.
6.
Add enough water to just cover the chicken. Add 2 teaspoons of salt and 1/2 teaspoon black pepper then stir.
7.
Simmer the chicken for 40 to 60 minutes or until cooked through, being cautious not to boil.

Once cooked, remove the chicken to a plate to cool. Then remove and shred the meat, discard the skin, bones, and neck. Set the meat aside.
9.
Strain the broth from the pot through a fine mesh strainer and set aside.
10.
In a large Dutch oven with a tight fitting lid, melt the butter over medium-low heat.
11.
Slice the sausage in 1/3 inch slices and add it to the butter. Brown the sausage.
12.
Add 8 cups of the reserved broth to the pot and bring to a rolling boil.
13.
Add more salt and pepper to taste. Add the rice and stir well. Add the shredded chicken.
14.
Reduce the heat to a simmer, cover, and cook for 20 minutes, stirring once or twice, or until the rice is tender and most of the liquid is absorbed.
15.
Add additional broth if necessary.
