BROILED SALMON
Ingredients
Red Bliss Potato, skin on Dijon Mustard Pommery Mustard Parsley, chopped White Vinegar White Onion, chopped Bay Leaf Sugar, granulated Chicken Stock
1. Boil the potatoes until fully cooked, strain and leave on a tray to steam off. 2. When potatoes are cool enough to handle, but still warm, cut in quarters. 3. Put the chicken stock, vinegar, sugar, chopped onions and bay leaf in pot and boil, then simmer 2 minutes. 4. Add the salt, mustards, pepper and stir well to combine. 5. Stir all together well... enjoy.
Chef Christian
Originally from Germany, Chef Christian has been with Norwegian since 2017. Previously, Chef Christian worked with renowned brands like InterContinental Hotels & Resorts, Mandarin Oriental and The World — Residences at Sea. He cites his food philosophy as relatively uncomplicated, honed by European cooking techniques, seasonal and regional. Chef Christian was a large part of the food and beverage development on our new ships — Norwegian Prima® and Norwegian Viva™. “There is so much to experience on board Prima and Viva. All venues should be thoroughly explored and enjoyed — indulge in something new for a change of perspective,” he says.

1. For the dressing: In a small bowl, combine the mayonnaise, buttermilk, horseradish, mustard, apple cider vinegar, sugar, black pepper and salt. Cover and chill. 2. For the cabbage mix: In a large bowl, toss the cabbage, parsley and scallions. 3. Add the dressing and mix until thoroughly combined. 4. Chill the coleslaw for at least 30 minutes before serving.
Broiled Citrus Honey Salmon
4 x 6 oz 1 Tbs 1 oz Zest 4 oz 4 oz
Salmon Brown Sugar Honey Lemon Sliced Pickles Baked Beans Salt & Pepper to taste
1. Place the sugar, honey, lemon zest, salt and pepper into a bowl and mix until well combined. 2. Evenly spread the mixture onto the salmon and refrigerate for 45 minutes. 3. Place the salmon into the oven preheated at 380° F, for approximately 6 minutes. Finish in the oven broiler position for 2 to 3 minutes. 4. Served with a side of coleslaw, potato salad, cornbread, pickles and baked beans

Butter, melted Milk Large Egg Yellow Cornmeal All-Purpose Flour Sugar, granulated Baking Powder Salt Jalapeño, chopped Cilantro, chopped Cheddar Cheese, shredded
1. In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. 2. Add the cornmeal, flour, sugar, baking powder and salt all at once; stir just until the flour is moistened (batter will be lumpy). 3. Add the jalapeño and cilantro; fold gently. 4. Pour batter into a non-stick pan. Spread batter evenly in pan and smooth top of batter. 5. Sprinkle shredded cheese on top. 6. Bake in a pre-heated oven at 400° F, for about 20 to 25 minutes. Cool down before serving.

Tell us about your very first Norwegian cruise — when was it, where did you go?
Our first cruise was right after Richie retired in March of 2015. We sailed on the Breakaway to Florida and the Bahamas including Great Stirrup Cay.
Since our first cruise, we have cruised with Norwegian 18 more times. Most of our voyages have been up and down the Atlantic from Canada to Aruba.
How many NCL cruises have you taken since then?
We have always cruised together.
Who do you usually cruise with?
Our favorite overall cruise was a 10 day on the Gem from New York to several Caribbean ports. We met several of the entertainers and spent time with them and still remain in contact.
What has been your favorite overall cruise? Why?
Our bucket list destination has always been to Alaska. Everyone we have ever spoken to who has already been there says it’s the most awesome place they’ve ever been to.
What would be your “bucket list” cruise destination?
Over the years, we have had so many great adventures. Our favorite destination so far has been Bermuda. The first time we walked down a narrow pathway to Church Bay, our breaths were literally taken away with the beauty. To this day, we always say we felt like we were on a movie set.
What is your favorite cruise memory?
We’re pretty adventurous and decided to rent a scooter on Tortola for a day at the beach. The beaches are on the other side of the island, and little did we know how treacherous the ride would be. We laugh about it now, but I didn’t think I’d make it back to the ship in one piece.
What is the funniest thing that’s ever happened to you on a cruise?
Being a Latitudes Rewards member is the best thing you can do for yourself. We enjoy all the perks, especially the specialty dining we receive. Recently we’ve used the laundry service since we’ve been taking longer cruises, and it has been so helpful. Priority embarkation has been so convenient too.
What do you love most about being a Latitudes Rewards Member?
The first members cruise was so much fun. We loved the special surprises we received before and during the trip. The special events were something extra to enjoy and made us really feel like part of the Norwegian family. The unbelievable thing was that we won the sweepstakes for the Viva christening cruise where we were treated like royalty!
How was your experience on the first members cruise?
We are always planning our next adventure. So far, we have 3 cruises coming up in 2024. As fate has it, the 2nd Annual Latitudes cruise is to Alaska in September. We’ll be there! We are so looking forward to the scenery, excursions and enjoying the Bliss.

Whenever we board a ship that is new to us, we always take the time to do our homework and explore the ship at home and right after we have our lunch on embarkation day. We learned the hard way that you might finally discover something on the end of your voyage that you missed and wished you hadn’t. We’d also suggest trying everything and anything that’s offered while on board. Some of our best times have been doing things we never thought we would.
What would be your “top tip” or advice for someone who has never cruised before?

How long have you been working with NCL?
I enjoy most working on the ship because I get to travel to see many different countries, make new friends, try many kinds of food and exchange our culture and lifestyle while on board.
What’s your favorite thing about your job?
Skagway, Alaska. Even though I am not on that itinerary at the moment, it’s my favorite one. My travel secret is when you go to Skagway, Alaska please don’t hesitate to go see the glacier. One of the most incredible experiences I had was flying in a helicopter for an hour and a half over the beautiful mountains to the glacier. I really recommend it to any crew or guests.
Do you have a favorite port you’ve visited?
I am from Cambodia — the only Cambodian on our ships!
Where are you from?
I am currently on Norwegian Pearl, and I love the great food from Moderno. The servers are very nice and friendly; they keep feeding us till we say, “No more, please!” I also enjoy getting a drink from Spinnaker Lounge. There’s nice, romantic music or sometimes I can catch a show while relaxing with a glass of red wine.
What’s your favorite spot on board?
I have been working with NCL about 5 years.
I enjoy going to different countries and exploring the world.
What do you love most about working for NCL?
Bermuda, especially on an itinerary where you can stay overnight. There’s no need to hurry back when you go out, and you can spend as much time exploring as you want.
Favorite cruise destination?
NCL recently hosted a dinner for crew members aboard BLISS who've worked on NCL ships for over 25 years

What is your advice for some of our guests?
I’m currently on board Norwegian Pearl. I highly recommend the pool deck when a live band is playing. Everyone is happy and dancing — it’s great to see!

Antonio Hidalgo has a unique connection and commitment with the fascinating world of wines. He is the 8th generationof family owned Bodegas Hidalgo La Gitana — a worldwide recognized Sherry house founded by his great grandfatherin 1792 in Sanlucar de Barrameda, Spain. Born and raised in Sanlucar with the winery as his playground, Antonioendeavored every single job there was available from harvesting to production. By the age of 17 he became part ofthe winemaking team.

Michael Mondavi is known as the “quiet icon” among his friends and colleagues and is widely credited with helping to establishand build the Napa Valley wine industry as we know it. Raised at the Charles Krug winery in St Helena, Michael’s wine careerbegan in 1966 when he and his father Robert co-founded the Robert Mondavi Winery in Oakville, Napa Valley. He servedin many positions at the winery, including winemaker for the first eight harvests with the celebrated 1974 vintage. In 1999,Michael — along with his wife Isabel and their two children, Rob, Jr. and Dina — founded Michael Mondavi Family Estate,creating a sustainable legacy to be passed down to the next generation.

He cites his food philosophy as relatively uncomplicated, honed by European cooking techniques, seasonal and regional. Chef Christian was a large part of the food and beverage development on our new ships — Prima and Viva. “There is so much to experience on board Prima and Viva. 1.Mix all the ingredients together in a bowl, season to taste, reserve and chill.

1. Combine all ingredients, using dough hook or paddle. 2. Knead 6-8 minutes on low speed until dough comes together and consistency is smooth. 3. Shape dough into rectangle and cover with plastic wrap. 4. Chill for 45 minutes. Divide dough into 4 pieces. Roll out into thin sheets, place on parchment lined sheet pans. 5. Wash with milk, sprinkle with Za’atar spice. 6. Bake at 325*F (160*C) for 20-25 minutes or until crisp and color is light golden brown. Store in dry place.

August 2022 was a big month for us. The first of six ships in the groundbreaking Prima Class, Norwegian Prima®, debuted to more than 2,500 guests in the beautiful Icelandic capital of Reykjavik. Against the dramatic landscape of Iceland, we got a chance to show off a ship that’s truly in a league all her own. Norwegian Prima is a ship of firsts and unique onboard experiences like the fastest slides at sea, the first three-level racetrack at sea, a multimillion-dollar sculpture garden and Infinity Beach, featuring infinity pools looking out over the ocean. It’s only fitting that she’d be the first to be christened in Reykjavik, too. Guests at the christening ceremony were treated to a show-stopping performance by popular Icelandic group and 2021 Eurovision fan favorites, Daði og Gagnamagnið (pronounced "Dah-they Oh Gack-no-Mak-ne"), before Norwegian Prima's very own godmother, Katy Perry, took to the main stage to officially christen the vessel with the ceremonial champagne bottle break across the ship's hull. The three-level Prima Theater & Club stage was then transformed into a whimsical backdrop where guests enjoyed a powerhouse performance of some of Katy Perry’s biggest hits.
