Hidden behind a plain white door at the back of a tiny taqueria is one of Paris’ best known and most beloved cocktail bars. Founders Carina Soto Velásquez and Josh Fontaine set out to create a bar that celebrated Latin American culture, and coincidentally found a former Colombian restaurant for their space. In a neighborhood that’s known to be a magnet for visiting creatives, especially during Paris Fashion Week, this bar remains a longstanding favorite among locals for its low-key vibe and approachable, yet creative drinks, like the Verano (orange leaf gin, smoked blood orange, red wine) or Skin of a Killer (black sesame bourbon, salted caramel, black garlic). The menu changes by the season, but one signature drink, La Guepe Verte, is always available. The mix of cucumber, coriander and chile de árbol–infused tequila was created by Toby Cecchini, a friend of Velásquez and Fontaine, as a riff on one of his own drinks, The Green Hornet.
