For each of the five bars on this list, it’s the ability to be many things at once; to bridge the gap between N/A and full-proof, between futuristic minimalism and ultramaximalism and, perhaps most of all, between past and future. In Chicago, a decades-old dining institution became a drinking destination, the first bar in the city’s Chinatown. A “halfway decent bar” brought controlled chaos to the 200-year-old Portland, Maine, street it calls home. And in Philadelphia, a new concept inherited an old space, keeping as much as they could in their mission to run a sustainable program that doesn’t compromise on quality. Grounded in tradition, with an eye on the future, these bars represent the best of right now. But their success would not be possible without the trailblazers that came before them. So, in addition to recognizing the best of the new, we are also honoring an industry icon, a bar that, since its inception a decade ago, has remained a source of inspiration and boundary-pushing imagination.
