Toca da Raposa
After a stint in London to hone her bartending skills, founder Constança Cordeiro moved back to Lisbon to open Toca da Raposa, a bar located near Largo do Carmo that highlights fresh Portuguese produce. Every day, she walks with her dog in a forest just outside of Lisbon’s city limits to forage ingredients to incorporate into cocktails, each of which is named after animals, such as the Lioness (cardamom leaf vodka, strawberry liqueur and fino sherry) and the Scarab (clementine leaf gin with turmeric cordial). Cordeiro also recently opened UNI, a nine-seat cocktail bar, with the idea of conceiving each cocktail as if it were a perfume, using ingredients like fruits, plants, botanicals, minerals and grains.
