Part wine bar, part restaurant, Liberty’s main aim is to simply serve things that are delicious and unexpected. The team pulls from a wide-ranging set of inspirations, including Australia’s contemporary winemakers and brewers and the rich immigrant history of Melbourne’s food. Bar manager Nick Tesar was not only runner-up in the global Diageo World Class Cocktail Competition this year, but also co-owns a liqueur company, Marionette. His fun-loving and esoteric tastes always make for a drinking adventure. Ask for a recommendation on pét-nat or local, bottle-conditioned beer and back it up with a taste of Tesar’s own nocino—it’s out of this world.
