Settle Down Tavern
Brian Bartels, Sam Parker and Ryan Huber, who met while working at Madison’s Great Dane Pub in 1997, deliver their own take on the classic Wisconsin tavern. The local beers, such as a hazy IPA from Young Blood Beer Co. across the street, are cold; the wines are mostly orange, and, more often than not, from female winemakers; and the cocktails speak to Wisconsin drinking. There’s a superlative Bloody Mary, and no wonder: Bartels authored a book on the subject. The trio also run Oz by Oz, which has a strong amaro program and a witchy-literary vibe. Their newest spot, Turn Key, pushes things further with fancy relish trays, a dirty Martini-Bloody Mary mashup, and a reverse Manhattan spiked with Branca Menta.
