One of Australia’s most boundary-pushing bars, ultramodernist Byrdi is owned and run by Luke Whearty, previously of Operation Dagger in Singapore. Making use of seasonal, hyperlocal ingredients and plenty of prep involving fermentation and distillation, the spirits here take a back seat to what the land offers up. Whearty is a bartender like no other, and his quiet, thoughtful demeanor and innate understanding of ingredients have more in common with Australia’s best modern chefs than our generally gregarious cocktail bartenders.
