Monkey Mash
Since opening in 2019, the vibrant tropical atmosphere and signature zero-waste cocktails have made Monkey Mash one of the most acclaimed bars in the city. Fruit peels, coffee grounds and other leftovers that would otherwise end up in the trash are given new life as syrups, tinctures and infusions using rotary evaporation, sous-vide and fermentation techniques. The cocktails are focused on sugar cane and agave spirits alongside a range of ingredients from all over the world.
