How does it work? Compared to Coravin’s still wine preservation system that uses argon gas, the sparkling system uses a recyclable CO2 capsule that can preserve seven bottles of sparkling wine. Once locked with the stopper, the system is charged with a measured amount of CO2 to keep the fizz inside the bottle. This new system allows you to enjoy Champagne, Prosecco, and Cava while preserving its crisp flavour and effervescence for up to four weeks. The art of the captivating drinking rituals Discover a selection of bespoke cocktails inspired by the home of the Astor’s, New York. The drinks from the cocktail programme evokes unique stories from the city’s five boroughs – Upper Manhattan, Lower Manhattan, East Side, West Side, and Midtown. The Astor Hour invites guests to savour some of the New York-inspired cocktails, as well as selected wines, beers, and spirits at a special rate. Guests can also experience the Champagne sabrage ritual, a theatrical ceremony of Champagne bottle opening using a sabre, honouring the celebration and tradition dating back to the days of the French Revolution, a custom exclusive to The St. Regis and perfect for celebratory occasions.

Maria do Leste, The Mary of the East Said to be the birthplace of the Bloody Mary, The St. Regis Bar takes its signature concoction more than seriously. A time-honoured recipe that has been famously adapted to integrate local nuances to pay tribute to each St. Regis Bar and its location, the Maria do Leste is Macao’s own interpretation of the classic. Inspired by the once-upon-a-time trading hub for Portuguese sailors, this Macanese adaptation borrows Oriental flavours with Iberian components gathered from the seven seas. Think a medley of Portuguese Chuoriço, Brazilian limes, African piri piri, Indian cinnamon and paprika, Chinese black vinegar and black peppercorns with a lobster egg tart.
Hailing from Scotland’s Isle of Skye, Talisker is a whisky made by the sea. With notes of peaty smoke and a hint of salinity that lingers on your palate, it cuts with citrus and finishes sweet, an impeccable match with fresh oysters. The briny taste of the oysters and the peaty, maritime malt will whisk you away to the Atlantic shores. To appreciate this lush indulgence, follow three simple steps: sip, slurp, shell. Begin with a sip of Talisker to unfold your palate, then slurp the oyster and allow it to connect with the malt. Lastly, pour a splash of whisky into the shell.

Ingredients: 50ml Talisker 10 Year Old 30ml fino sherry 2.5ml orange oleo saccharum 0.9g umami bitters 1.2g orange bitters 1.2g Maldon salt solution (2 percent)
How to make the cocktail: 1) Add all the ingredients to a mixing glass. Add ice and stir. 2) Strain into a chilled rock glass. 3) Garnish with seaweed chips for a decadent serve.

“The first thing you really want is to break through, let the wind blow over your body, run over these grassy rocks,” says Art Fatkullin, Ovolo Hotels’ assistant beverage manager and 2021 Diageo World Class Hong Kong and Macao Bartender of the Year. “You want to hold your breath and jump off the cliff straight into this deep-blue sea and melt into its cold, salty waters,” he adds. Fatkullin’s own journey began in his native St Petersburg, where he fine-tuned his palate as a tea sommelier before discovering a passion for mixology. He was soon creating quite a stir working across Russia and Asia, and collected accolades as quickly as late-night stories. When it came time to create a cocktail for Talisker, he came back to its evocative, primal origins. Try pairing a Sea You There (or two) with half a dozen oysters.
In the late 19th century, New York high society was the pinnacle of sophistication. And no one personified it more than Mrs Caroline Astor, the matriarch of The St. Regis Hotel’s founding family and doyenne of the city’s Gilded Age society. So who else would Taki Li, senior bartender at The St. Regis Bar Hong Kong, seek inspiration from to create her signature cocktail? Taki entered hospitality seven years ago, first at Hotel Icon before honing her craft at The Peninsula. Since 2020, she’s been making a splash at The St. Regis Bar within the hotel group’s Hong Kong outpost – a favoured watering hole for the city’s own high-society. Gin cocktails such as the martini and the gimlet have stood the test of time, and Taki wanted to pay homage to Mrs Astor in a similarly punchy cocktail worthy of the times. The result is Lina.

Ingredients: 40ml Tanqueray No. Ten (infused with Jasmine Phoenix Pearls) 15ml Amaro Santoni 15ml Verjus 60ml grapefruit soda 5 drops Tanqueray No. Ten Tropical Citrus Heart bitters
How to make the cocktail : 1) Build the ingredients in a chilled highball glass with a long block of ice. 2) Garnish with bamboo leaf, grapefruit zest, and jasmine flower. Serve.

Taking its name from the young Caroline Astor’s nickname, Taki chose to evoke her playful, energetic spirit with a cocktail based on the citrus and chamomile notes of Tanqueray No. Ten. These blend beautifully with the Jasmine Phoenix green tea which Taki infused into the gin, with floral notes calling back to the blooms adorning the ballroom of Mrs Astor’s legendary annual ball, an invitation to which confirmed acceptance into Manhattan’s elite. Lina’s exclusive ball typically falls on the third Monday of January, however you can try Taki’s Lina year-round at The St. Regis Bar Hong Kong.
