From the bottom of the sea to the top of the menu, the crustacean under the cloche has long been a baller’s go-to. Served in a shell, in a roll, or even topped on your mac n cheese, lobster is an instant elevator for dishes served takeaway to tableside via that white-gloved waiter.
Apparently the first martini was knocked up at the famed Knickerbocker Hotel to impress America’s first billionaire, John B. Rockerfeller. Fortunately, you don’t need to be one to drink one these days—you will, however, need to decide how dirty you like it.
Once a working-class dish, served up en-masse and paired with a pint of stout following a long day on the job, these bivalved beauties have gone through one helluva reputation reinvention. So, what happened? These days, it’s a classic case of demand exceeding supply—and the fact that a good oyster is at least an 18-month-old oyster.
Some say the origins of caviar can be traced back to the Persians, savouring sturgeon roe for its medicinal benefits. Others reckon it was the great philosopher Aristotle, who described it as being served with grandeur, clad by flowers and trumpets. There’s a touch less fanfare when indulging in caviar these days, heck, find the right spot and they might even serve it as a budget-conscious bump off of your fist.
Tradition says soy on sashimi is a-okay, though when there’s rice involved, it’s a different story. Those wanting to avoid mid-meal death stares should exercise that soy sauce with caution—bonus points for anyone who can flip their nigiri and dunk it without spoiling that pristine brick of white rice.
