Puréed apples are a source of fibre.
When baking, you can replace up to half the butter or oil in a recipe with puréed apples or puréed tinned beans such as cannellini.
Veggie carbs contribute to your 5-a-day.
If you want to up your veg intake and reduce carbs, swap regular rice for cauliflower ‘rice’. Or when making lasagne, swap traditional pasta sheets for sliced aubergine, butternut squash or courgette.
Tinned lentils are a source of protein.
Use lentils instead of mince when you’re making pasta sauces, burger patties and koftas. Or use a mix that’s half lentils, half mince.
To serve, toast the pitta and cut into strips. Serve with the chicken and salad for added crunch .

Meanwhile, make the colourful salad. Finely chop the tomatoes and cucumber. Finely slice the onion and mix all the vegetables together with some seasoning. Set aside.

Heat the oil in a large, deep frying pan and fry the chicken for 3-4 minutes, until white all over. Add the passata and any remaining yogurt marinade and gently simmer for 10 minutes, or until the chicken is cooked through. Mix the cornflour with a little cold water and then add to the sauce. Continue to cook for a further couple of minutes, until the sauce has thickened. Season well. Remove from the heat, add the spinach for colour and leave covered until the spinach wilts.

Cut the chicken into chunky pieces and place in a dish. Grate the ginger and garlic and mix with the lemon juice, cumin, chilli flakes, curry powder and the Greek yogurt. Pour the marinade over the chicken and stir well so all the chicken is coated and leave to marinate for 30 minutes (or longer if you can).

Mash the sweet potatoes and season. Spoon over the fish mixture, taking it to the edges of the dish. Rough up the surface with a fork to encourage crispiness. Place on a baking tray and then bake for 30-35 minutes until the top is golden and the sauce is bubbling up around the edges. Stand for 10 minutes before serving.
Cut the haddock fillets into large chunks. Stir into the sauce with the prawns and peas (adding the peas frozen ensures they keep their colour ). Transfer to a 2.2 litre oven dish (about 20cm x 27cm x 6cm deep).
While the potatoes are cooking, halve the leeks lengthways and slice. Heat the oil in a separate large saucepan. Cook the leeks with a pinch of salt for 6-8 minutes until softened. Stir in the soft cheese, then gradually stir in the stock and bring up to a simmer. Put the cornflour in a small bowl and blend with 1½ tablespoons water. Stir into the creamy stock and continue to stir until thickened. Remove from the heat. Zest the lemon and add to the sauce with the juice of half the lemon for added zing and the chopped dill. Season to taste.
Preheat the oven to 200°C, fan 180°C, gas 6. Peel the sweet potatoes, then cut into chunks. Put in a saucepan and cover with cold salted water. Bring to the boil and cook for 16-18 minutes or until tender. Drain in a colander and leave to steam dry.

Haddock and prawn fish pie with sweet potato mash
Per serving: 345 cals, 9g fat, 4g sat fat, 13g sugar, 0.2g salt, 16g protein, 11g fibre
Serve the dhal in bowls with the carrots and kale on top.
Five minutes before the end of the cooking time for the carrots, massage the kale with your fingertips for a minute until soft. Add to the roasting tray and toss to coat in the spices. Continue cooking for 5 minutes, or until just crisp .
Meanwhile, put the lentils in a large saucepan and add 400ml of water. Finely slice the onion and garlic and finger chillies and add to the pan. Grate the ginger and add to the pan for warmth , along with the turmeric and cumin. Bring to a simmer, cover and simmer for 10-15 minutes until the water has been absorbed. Add the creamy coconut milk and continue to cook for a further 10-15 minutes, until the lentils are soft. Season well.
Preheat the oven to 200°C, fan 180°C, gas 6. Cut the carrots in chunky wedges and put them in a roasting tray. Sprinkle over the garam masala, some seasoning and the oil and toss to coat the carrots. Roast in the oven for 30-35 minutes.

Spicy roasted carrot, kale and coconut dhal
100g kale
Per serving: 466 cals, 13g fat, 5g sat fat, 14g sugar, 1.4g salt, 45g protein, 14g fibre
Divide the mash among plates and spoon over the meatballs. Serve with the broccoli alongside.
Meanwhile, bring a large pan of salted water to the boil. Drain and rinse the beans, then add to the boiling water with the cauliflower florets. Boil for 12 minutes or until the cauliflower is very tender. Drain and return to the pan. Use a potato masher to combine to a coarse-textured mash. Season well and stir in the mustard for warmth and 25g soft cheese. Cook the broccoli in salted, boiling water for 3-4 minutes until tender, then drain.
Heat the oil in a large nonstick frying or sauté pan and brown the meatballs for about 8-10 minutes. Meanwhile, thinly slice the onion. Once browned, set the meatballs aside on a plate. Add the onion to the pan with a generous splash of water (to scrape up all the caramelised bits) and cook over a low heat for 5 minutes until softened. Stir in the flour and cook out for 1-2 minutes. Gradually whisk in the stock until smooth, then bring to a simmer. Add the meatballs and simmer for 10 minutes. Stir in 75g soft cheese until smooth and creamy .
Put the pork mince, egg yolk and thyme in a large bowl. Grate the apple (discarding the core) and add to the pork mince for a bit of sweetness . Soak the bread in cold water for 1 minute, then squeeze well and crumble it into the bowl. Season and mix everything well with your hands, then shape the mixture into meatballs (you should get about 20).

Pork and apple meatballs with mustard mash
1 x 400g tin cannellini beans
1½ tbsp wholegrain mustard
25g reduced-fat soft cheese
To serve
2 x 200g packs Tenderstem broccoli
For the meatballs
Per serving: 592 cals, 8g fat, 2g sat fat, 30g sugar, 0.5g salt, 26g protein, 20g fibre
Once the sweet potatoes are cooked, split open and then fill with the ragu. Grate over some parmesan to serve, if using.
Blitz the cauliflower to a crumb in a food processor, then add this to the pan. Continue to cook for 3-4 minutes, before adding the drained lentils and tinned tomatoes for bulk , followed by the balsamic vinegar and honey for a touch of sweetness . Bring to a simmer, cover and simmer gently for 45 minutes. Season well. Roughly tear the basil and stir through the ragu for added colour .
Meanwhile, finely chop the onion, celery and carrot. Heat the oil in a large saucepan and fry the vegetables for 6-8 minutes, or until soft. Add the garlic granules, thyme, smoked paprika and chilli flakes if using. Fry for another 2 minutes, then add the tomato paste and continue to cook for 2 more minutes.
Preheat the oven to 200°C, fan 180°C, gas 6. Prick the sweet potatoes all over and bake for an hour, or until soft inside.

Make five meals to feed four – all for under £20
The autumn months see seasonal British produce reach new heights. Here's how to make the most of the pumpkin, beetroot and rosy apples filling the Lidl shelves...

When the pie is cooked, remove from the oven and leave to cool for 5 minutes. Transfer to a board and drizzle over a few tablespoonfuls of the warm caramel sauce. Serve with salted caramel ice cream and the extra caramel for drizzling.
Meanwhile, make the sweet caramel sauce. Put the sugar in a small frying pan and heat gently until the edges start to melt. Continue to heat giving the pan a swirl every now and again to encourage the sugar to dissolve, but don’t stir. When the sugar has melted and is a deep caramel colour, carefully add the cream and butter and stir well until combined. Remove from the heat and set aside.
Unroll the pastry and roll out further so it’s more of a square shape. Transfer to the baking tray. Pile the apples and pears into the middle of the pastry, leaving a 5cm border around the edge. Roughly arrange them so the slices are lying flat and fan out if any are sticking together. Fold the edges of the pastry up to encase the fruit, creasing as you go around to make sure all the fruit is tucked in the pastry. Lightly beat the egg and brush the pastry with the beaten egg. Sprinkle the demerara sugar over the pastry edge and then bake for 30-35 minutes, until the pastry is crisp and golden brown and the fruit soft.
Preheat the oven to 200°C, fan 180°C, gas 6 and line a large baking tray with baking paper. Finely slice the pears and apples and place in a bowl with the dark brown sugar, cinnamon, flour and lemon juice and toss to coat the fruit. Roughly chop the pecans and add to the mix for crunch . Set aside.

50g dark brown sugar
½ tsp ground cinnamon
1 tbsp plain flour
125g caster sugar
100ml double cream
25g salted butter
For the caramel sauce
Juice of ½ lemon
30g pecans
1 x 375g pack ready rolled shortcrust pastry
1 medium egg
1 tbsp demerara sugar

Roughly chop the peanuts and parsley and scatter over the top of the houmous. Serve with the spicy tortillas.
Drain the chickpeas, reserving the liquid. Put the cooled pumpkin in a blender with the chickpeas, three-quarters of the chickpea water, the garlic cloves, lemon juice and peanut butter. Season well and blitz until smooth. Add more chickpea water if necessary to get a lovely smooth texture. Transfer to a bowl and smooth the top.
Cut each tortilla into 12 triangles and place these on a large baking tray, spacing out so they don’t overlap too much. Mix the remaining oil with the smoked paprika and chilli flakes. Brush the tortillas all over with the spicy oil and bake for 6-8 minutes, or until crisp and golden. Remove from the oven and set aside to cool.
Preheat the oven to 200°C, 180°C, gas 6. Cut the pumpkin or squash into chunks and place in a roasting tin. Drizzle over 1 tablespoon of oil, toss to combine and season well. Roast for 25-30 minutes until soft. Remove from the oven and leave to cool.

2 cloves garlic, crushed
1 tbsp flat leaf parsley
20g peanuts
400g peeled pumpkin or butternut squash

Nutty pumpkin houmous with spicy tortilla chips

Reduce the oven temperature to 200°C, fan 180°C, gas 6. Gently press down the centre of the tart where it has puffed up. Spread with the pesto for punch , then top with the wilted spinach and season with salt and black pepper. Tear over the mozzarella for creaminess and top with the roasted beetroot for earthiness . Bake for a final 10-12 minutes until golden and melted, then slide onto a board and scatter with the basil, if using, to serve.
Roll the pastry on its paper onto a large baking sheet. Score a 2cm border around the edge and prick the base all over with a fork. Lightly beat the egg, then use to brush the border of the pastry. Bake for 10-12 minutes, or until golden and well risen.
Preheat the oven to 220°C, fan 200°C, gas 7. Scrub, trim and peel the beetroot, then thinly slice into 5mm rounds. Toss with the oil, season and arrange in one layer on a large, lined baking tray. Roast for 20-25 minutes until tender. Meanwhile, put the spinach in a colander and set over the sink. Pour over a kettle of just-boiled water to wilt. Leave to cool, then squeeze out the excess water.

As a snack
Make tasty veg crisps with beetroot peelings. Scrub and pat them dry and toss with olive oil, garlic granules, spices and seasoning. Then bake on a tray in a hot oven until crisp.

Boil peeled and quartered beets until tender then blitz with readymade houmous in a food processor.
In pasta
Create stunning pink pasta by cooking it in a mix of water and beetroot juice. Serve with dollops of walnut pesto and fresh goat's cheese.

If anyone knows what makes an apple worth eating, it’s Tom! His family farm in Kent has been growing apples for Lidl for more than a decade. ‘As Lidl grows, so do we,’ he says. The family started with 200 acres in 1946; today, the farm stretched over an impressing 4,000 acres and is home to 1 million trees! ‘It’s a particularly good place for growing, the garden of England,’ says Tom. The harvest itself lasts eight weeks and all of Tom’s apples go into cold storage to ensure a crisp freshness for longer. ‘The cold storage is really high tech,’ explains tom. ‘It’s quite exciting as it helps advance shelf life and extend the British apple season.’

Stir the mushrooms, kale, crème fraiche and mustard into the sauce for creaminess and punch, then season well. Carve the pork and divide between plates, spooning over the sauce to serve.
Meanwhile, slice the mushrooms. Heat the remaining 1 tablespoon oil in a large nonstick frying pan, then season and sauté the mushrooms for about 5 minutes over a medium-high heat until golden brown. Add the kale and cook for a further 2 minutes until bright green and wilted.
Trim the leeks and slice into rounds. Add to the pan with a further ½ tbsp oil and cook over a low heat for 5 minutes until softened and starting to colour . Meanwhile, peel and finely slice the garlic. Stir the garlic and flour into the leeks and cook for 1-2 minutes, stirring. Gradually pour over the cider and stock, stirring, then bring to the boil. Return the pork to the pan, cover with a lid and roast in the oven for 1 hour 30 minutes, turning the pork halfway, until cooked through. Lift the pork onto a plate, loosely cover with foil and set aside to rest. Meanwhile, increase the oven to 190°C, fan 170°C, gas 5. Return the leek and cider sauce to the oven, uncovered, for a further 20 minutes or until thickened.
Preheat the oven to 170°C, fan 150°C, gas 3½. Pat the pork dry with kitchen paper, remove the string and slice off the skin and most of the thick fatty layer. Season generously. Heat 1½ tablespoons oil in a large, lidded casserole or deep ovenproof pan. Once hot, add the pork and sear on all sides until well browned – about 10-15 minutes. Set aside on a plate.

2½ tbsp plain flour
500ml cider
150ml chicken stock
250g chestnut mushrooms
100g sliced curly kale

Creamy mushroom and cider pot roast pork
3 tbsp crème fraîche
2 tsp wholegrain mustard
Peel, quarter and core the pears. Cut into chunks and put in a medium-large oven dish (about 27cm x 20cm x 6cm deep). Toss with 3 tablespoons of sugar and the cinnamon for added warmth , until coated. Roughly chop the dark chocolate and scatter over the pears. Top with the crumble mixture, then bake for 35-40 minutes until the topping is crisp and golden brown and the fruit is bubbling. Leave to stand for 10-15 minutes, then serve in bowls, with ice cream or custard if you like.
Preheat the oven to 190°C, fan 170°C, gas 5. For the crumble, mix the oats, flour and a pinch of salt in a large bowl. Dice the butter and rub into the oat mixture with your fingertips until no large lumps of butter remain. Add 75g light brown sugar for sweetness and continue to rub in until the mixture comes together into a chunky crumble. Chop the pecans, stir into the crumble mixture to add crunch and set aside.

Fill four shallow bowls with the curry sauce and add an omelette in the middle. Drizzle over a bit more sauce and garnish with coriander. Serve with naan breads on the side for mopping up the juices.
Beat the eggs in a large bowl. Roughly chop the coriander, reserving some for garnish, and stir the chopped coriander through the eggs. Season well. In a small non stick frying pan, heat 1 tsp of oil. Add a quarter of the egg mixture and cook gently, scraping a spoon from the edges into the middle and letting the uncooked egg flood the empty space. When the egg is cooked around the edges but still slightly runny in the middle, flip half of the omelette over and transfer to a board and cover with foil. Repeat until you have four omelettes.
Finely chop the tomatoes (or blitz them in the blender) and add to the pan. Cover and simmer for 20 minutes. Add the coconut milk and continue to simmer uncovered for another 10 minutes. Add the spinach and cook until it’s wilted. Season with salt and keep warm while you make the omelettes.
Roughly chop the onion and put it in a blender with the garlic and ginger. Blitz to a paste. Heat 1 tablespoon of the oil in a large saucepan and fry the onion mixture for 3-4 minutes, until soft. Add the turmeric, curry powder, chilli flakes and tomato paste and continue to cook for 1-2 minutes.

Put the rich chocolate hazelnut spread in a piping bag with a star nozzle attached and pipe a little in each indent. Repeat until you’ve used all the dough, you should get around 15 balls. Use your thumb to press down in the middle of the balls to create an indent.
Put the hazelnut milk creme spread in a bowl with the egg and whisk until well smooth and combined. Carefully fold in the flour until you have a soft dough. Chill in the fridge for around 30 minutes.

Sift the flour and baking powder together with a pinch of salt. Alternate adding the flour mixture and the zingy lemony yogurt, with the mixer running, until everything is incorporated. Scrape into the prepared tin and smooth out. Bake for 35-40 minutes or until a skewer inserted into the centre of the cake comes out clean.
Grate the zest from the second lemon (you’ll use the juice for the lemon caramel). Add to a mixing bowl with the soft butter and sugar and beat until pale and creamy using an electric mixer. Beat in the eggs one at a time, adding a third of the ground almonds after each one.
Preheat the oven to 170°C, fan 150°C, gas 3. Grease and line a 20cm springform tin.
Pierce one of the lemons, place in a covered microwave-safe bowl and microwave for 3 minutes until tender, turning halfway through. Alternatively, cook the lemon (without piercing first) in a pan of boiling water for about 20 minutes until soft. Snip the lemon into quarters using clean kitchen scissors (keep any juice) and leave to cool. Discard the seeds then chop to a pulp, skin, juice and all, and mix with the yogurt or soured cream.

Sticky lemon and almond cake with lemon caramel
While the cake is cooking, make the lemon caramel. Add the juice of 1½ lemons to a medium saucepan with the sugar and heat gently until the sugar has dissolved, swirling the pan rather than stirring. Increase the heat and bubble for 8-10 minutes or until you have a syrup with a golden-brown colour. Remove from the heat and carefully add the juice of ½ lemon to halt the cooking process. Set aside to cool.

When the cake comes out of the oven, make holes in the top with a skewer and brush about one-third of the sticky lemon caramel over while the cake is still warm. Leave the cake to cool completely in the tin.

To serve, whip the cream to soft peaks. Release the cake from the tin and swirl the rich cream on top before drizzling with tangy lemon caramel. Add lemon slices to decorate, if you like if liked.
