We grow around half a million apple trees of a dozen different varieties, in over 4,000 acres, which means that we help keep British apples in-store all year round’. But it’s no easy task. Spiced cottage pie
SERVES 4 | PREP 10 MIN | COOK TIME 10 MIN
Divide the salad leaves between 4 plates then top with the cucumber and red onion salad, followed by the halloumi and nectarines then drizzle over any remaining dressing from the bowl.

Mix the olive oil, halloumi, nectarines and some black pepper in a bowl. The halloumi and nectarines with add some chew and to the dish.

1 onion, finely chopped 3 cloves garlic 3 tsp extra virgin olive oil 1 red pepper, finely diced 1 yellow pepper, finely diced ½ tsp turmeric 1 heaped tsp curry powder 1 tin chopped tomatoes 250ml hot vegetable stock 1 tin green lentils 1 tin red kidney beans 1 tin butter beans 75g sun-dried tomatoes, finely chopped For the mash: 800g Maris Piper potatoes, half peeled and half skin on 1 tsp turmeric 25g flat leaf parsley, finely chopped ½ tsp red chilli powder 75g butter 125ml warm double cream 75g grated mature cheddar cheese

Chop the potatoes into even-sized chunks and boil them for around 12 mins till they are cooked through. Drain and return the potatoes to the saucepan. Add the turmeric, parsley, chilli powder, butter and double cream to the potatoes and season generously with salt, then mash.

Sausage rolls with sriracha dipping sauce
1 onion, finely chopped 3 cloves garlic 3 tsp extra virgin olive oil 1 red pepper, finely diced 1 yellow pepper, finely diced ½ tsp turmeric 1 heaped tsp curry powder 1 tin chopped tomatoes 250ml hot vegetable stock 1 tin green lentils 1 tin red kidney beans 1 tin butter beans 75g sun-dried tomatoes, finely chopped
Per serving: 609 cals, 25g fat, 12.5g sat fat, 13.5g sugar, 0.9g salt
Preheat the oven to 200°C/180°C fan/gas mark 6.
Spoon the mash over the lentil mixture and sprinkle over the cheese for added . Transfer to the oven for 30 mins, or until the surface is brown and crunchy.
Add the tinned tomatoes and stock to the vegetables, then allow the mixture to boil and reduce by about half before adding the kidney beans, butter beans and green lentils to out the dish. Stir well and simmer for around 10 mins. Season and spoon the mixture into a pie dish.
Heat olive oil on a medium heat, add the onion then the garlic and sauté for 5 mins until the onions have softened. Add the red and yellow pepper for added and stir well. Sweat the vegetables for around 7 mins. Add the turmeric and curry powder for some added .
Add half the mixture into the halved rolled-out pastry and shape into a long log, fold over to cover and seal. Cut the pastry into smaller pieces then repeat with the other half.

Add in the mushrooms for some and cook until liquid has reduced, then leave to cool.
Fry the onions until soft then add the garlic and ginger for a bit of .
Add the onion mix along with the rest of the dry ingredients to a mixing bowl and combine gently.

Using a deep oven pan, place the mango and pineapple chunks for extra inside and mix, then pour your purée over the fruits.
